What This Role Involves

As Bakery Manager at Eataly Chicago, you'll oversee all daily operations of our bread bakery and pastry production area in this full-time position. You'll combine hands-on baking expertise with team leadership, production planning, and quality assurance to maintain the high standards our customers expect. Your responsibilities span from recipe execution and production scheduling to inventory management and food safety compliance.

What You'll Do

• Direct and mentor the bakery and pastry production team
• Develop and implement daily and weekly production schedules aligned with customer demand
• Ensure consistent quality and presentation of all bread and pastry products
• Manage ingredient sourcing, ordering, and inventory levels
• Train team members in baking techniques, food safety protocols, and operational procedures
• Maintain sanitation, equipment care, and organization of the production facility
• Enforce compliance with local health codes and food safety regulations
• Monitor production costs and identify opportunities to improve efficiency without compromising quality

What We're Looking For

• Substantial experience managing or operating a bakery or pastry production facility
• Deep knowledge of bread baking and pastry-making techniques
• Proven success leading, training, and retaining production teams
• Solid understanding of food safety regulations and best practices
• Experience managing inventory, ordering, and production budgets
• Strong organizational, time management, and communication abilities
• Comfort working in a dynamic retail food environment with peak periods
• Genuine enthusiasm for quality baked goods and Italian culinary traditions
