Day-to-Day Responsibilities

• Lead and direct the morning kitchen team, maintaining exceptional standards of sushi craftsmanship and food safety
• Oversee all aspects of sushi preparation, ingredient selection, quality control, and plate presentation
• Manage ingredient inventory, work with suppliers, and maintain fresh stock levels throughout morning operations
• Train and guide junior chefs and kitchen staff in sushi techniques, food handling, and restaurant standards
• Ensure full compliance with health and safety regulations and hygiene protocols
• Maintain an organised, clean, and efficient kitchen environment
• Communicate effectively with front-of-house teams to support seamless service

What We're Looking For

• Extensive experience as a Sushi Chef with proven supervisory or management experience
• Deep knowledge of sushi ingredients, techniques, and Japanese culinary traditions
• Strong leadership, decision-making, and communication abilities
• Food hygiene certification or willingness to obtain one
• Reliability and commitment to working consistent early morning shifts
• Passion for culinary excellence and continuous improvement
• Ability to thrive under pressure whilst maintaining high standards
