EN – Sushi Chef Manager morning shifts

Hana Group is seeking a full-time Sushi Chef Manager to lead our morning shift operations at our Bristol location. This is a hands-on management role that combines culinary expertise with team leadership in a fast-paced kiosk and production environment.

Position Summary

As Sushi Chef Manager, you'll oversee food preparation, quality control, and team coordination during morning shift hours at our Bristol kiosk operation. You'll lead both the culinary execution and the day-to-day management of our sushi production team, ensuring consistent quality, efficiency, and adherence to food safety standards whilst maintaining excellent customer service.

Key Responsibilities

• Lead morning shift sushi preparation and kiosk production operations
• Manage food quality, presentation standards, and ingredient freshness
• Supervise and mentor team members on production techniques and service excellence
• Monitor inventory usage and communicate restocking requirements to management
• Ensure full compliance with food safety regulations and health standards
• Maintain kitchen equipment and oversee opening and closing procedures
• Optimise workflow and coordinate service during peak morning periods

Requirements

• Proven experience working as a Sushi Chef or sushi production specialist
• Demonstrated supervisory or management experience in food production or hospitality
• Strong technical knowledge of sushi preparation, ingredients, and food safety practices
• Leadership capability and skills in training and motivating team members
• Excellent communication, organisation, and problem-solving abilities
• Commitment to availability for consistent morning shift patterns
• Food hygiene certification or willingness to complete qualification
