What This Role Involves

As Account Chef – Japanese Cuisine at Gategroup in San Diego, you'll oversee all culinary operations for our Japanese cuisine accounts. This includes menu planning, food preparation, quality assurance, and kitchen team leadership. You'll combine authentic Japanese culinary techniques with our operational excellence to deliver exceptional meals that represent both our clients' brands and Gategroup's commitment to quality service.

Responsibilities

• Develop and execute Japanese cuisine menus tailored to account-specific requirements and client preferences
• Oversee food preparation, plating, and presentation standards to ensure consistency and quality
• Manage Japanese cuisine kitchen operations and coordinate with prep, production, and service teams
• Maintain compliance with food safety regulations and Gategroup quality standards
• Monitor food costs, portion control, and inventory management for assigned accounts
• Train and mentor kitchen staff on Japanese cooking techniques and culinary standards
• Collaborate with account managers to understand client needs and adapt offerings accordingly

What We're Looking For

• Proven culinary expertise in Japanese cuisine with strong technical skills in traditional and contemporary preparation
• Experience as an Account Chef, Head Chef, or similar leadership role in a high-volume food service environment
• Knowledge of food safety, sanitation standards, and kitchen management
• Excellent communication skills and ability to work collaboratively across teams
• Flexibility to adapt menus and operations to diverse client specifications
• Physical ability to perform kitchen duties and stand for extended periods
