Sous Chef – Westoria – The Cosmopolitan

Join MGM Resorts as a Sous Chef at Westoria in The Cosmopolitan, located in Las Vegas, Nevada. This is a full-time position where you'll bring your culinary expertise and leadership skills to one of Las Vegas's most dynamic hospitality environments.

About the Role

As Sous Chef at Westoria, you'll play a critical role in our kitchen operations, supporting the Executive Chef while leading culinary teams to consistently deliver exceptional dining experiences. You'll be instrumental in food preparation, inventory management, and maintaining the highest standards of food safety and quality across all service periods.

What You'll Do

• Supervise and mentor kitchen staff, including line cooks and prep cooks, ensuring smooth daily operations
• Prepare and execute dishes according to restaurant specifications and culinary standards
• Manage food inventory, ordering, and cost control to meet restaurant budgets
• Maintain strict food safety and sanitation protocols across all kitchen areas
• Collaborate with the Executive Chef on menu development, seasonal offerings, and kitchen improvements
• Train kitchen team members on proper cooking techniques, food handling, and safety procedures
• Monitor food quality, plating, and presentation before dishes reach the table
• Assist with shift coverage and adjust staffing needs based on reservation volume

What We're Looking For

• Culinary degree or 5+ years of professional kitchen experience, with at least 2 years in a sous chef or senior kitchen role
• Proven leadership experience managing kitchen teams in a high-volume restaurant environment
• Strong knowledge of food safety regulations and certifications (SERVAFE or equivalent preferred)
• Exceptional attention to detail and commitment to culinary excellence
• Ability to work in a fast-paced setting and adapt to changing priorities
• Excellent communication and interpersonal skills
• Physical ability to stand for extended periods and lift up to 50 pounds regularly
