Join Lettuce Entertain You Restaurants as a Chef de Cuisine at our newest Nashville concept in Berry Hill, Tennessee. We're seeking a skilled culinary leader to oversee kitchen operations and elevate our sushi-focused dining experience in this dynamic, music-forward environment.
About the Role
As Chef de Cuisine at Sushi-san in Berry Hill, you'll lead the kitchen and maintain the highest culinary standards for our sophisticated Japanese cuisine concept. This full-time position offers the opportunity to work alongside Master Sushi Chef Kaze Chan, executing an ambitious menu in a fast-paced, seven-days-a-week operation that's quickly becoming a Nashville destination.
What You'll Do
- Direct and oversee all kitchen operations, ensuring consistent quality and precision across our diverse menu
- Execute signature dishes including traditional maki, handrolls, San-Sets, nigiri, and sashimi with exacting standards
- Lead the preparation of binchotan robata grilled items and Sizzling Rice specialties
- Manage inventory, food costs, and kitchen workflow to support daily service and efficiency
- Train and mentor kitchen staff to maintain technique excellence and brand standards
- Collaborate with beverage service on sake and beer pairings to enhance guest experience
- Maintain health, safety, and sanitation protocols throughout kitchen operations
What We're Looking For
- Proven experience as a Chef de Cuisine or executive kitchen leader in Japanese cuisine or fine dining
- Advanced expertise in sushi preparation, knife skills, and Japanese cooking techniques
- Strong leadership and team management abilities in high-volume kitchen environments
- Food safety certification and knowledge of health code compliance
- Ability to work full-time in a dynamic, seven-days-a-week restaurant setting
- Passion for culinary excellence and commitment to original, quality-driven cuisine
