Small Axe Bread is hiring an experienced Artisan Baker to join our Orange, Orange County bakery. This full-time position offers the opportunity to craft exceptional, hand-mixed breads using time-honored techniques while working alongside a team committed to quality and artisanal excellence.
About the Role
As an Artisan Baker at Small Axe Bread, you'll master the complete baking cycle—from starter and dough management through fermentation, shaping, proofing, and baking. You'll produce consistent, high-quality loaves and specialty breads that define our brand, maintaining strict adherence to recipes, timing, and food safety standards while adapting to natural variations in ingredient behavior and seasonal changes.
What You'll Do
- Mix, knead, and ferment dough according to established recipes and timing protocols
- Hand-shape loaves and specialty items with precision and attention to consistency
- Monitor proofing and fermentation conditions to optimize flavor and texture development
- Operate deck ovens and baking equipment safely and efficiently
- Conduct quality checks on finished products before packaging and distribution
- Maintain a clean, organized workspace and adhere to health and sanitation requirements
- Collaborate with team members to meet daily production goals
What We're Looking For
- Proven experience as an artisan baker or in a professional bakery setting
- Deep understanding of fermentation, hydration, and dough development
